After my shopping trip yesterday I was a little too excited to start making new things with all my delicious ingredients. First on the list- A chocolate peppermint protein shake. It ended up tasting like a Thin Mint cookie- my favorite Girl Scout Cookie! In drinkable form- it went down so smoothly. So I renamed it and called it the Thin Mint Protein Shake.
2 handfuls of spinach
1 scoop chocolate whey protein powder
1/2 teaspoon peppermint extract (only this amount-its really strong!)
2 cups vanilla almond milk
blend all together.
Don’t judge a shake by its color- this was a nasty green color but a lot of flavor!
Before making my protein shake, I hit the gym early to get in an intense workout.
I spent 30 minutes on the treadmill doing interval runs to complete 3 miles. Then I decided it was an arm day and created this circuit.
I repeated it twice, using 10 lb dumbbells. I felt the burn.
After showering for the day and drinking my Thin Mint Protein Shake, I spent the morning studying for an exam. To relieve me from the books, my friend Stephanie came to visit for an hour so we could catch up and chat. I used this opportunity to snack on my new coconut milk yogurt and some Gluten-Free Chex Cereal I picked up!
So many thoughts today! Do you ever have a day where you just are constantly thinking about the future and things you want to accomplish! I have never been this motivated in my life or curious about all the things I could do! Blogging, eating clean and working out have created this desire in me to make nutrition and fitness a bigger part of my life. Anyways before all this deep thinking started, I had breakfast.
I woke up and immediately grabbed a banana before heading off to the gym with Mike.
2 miles on the treadmill went quick and I followed it with some arm work.
For lunch, we stopped at Panera and I chose the asian sesame salad for some lunch!
Before I headed to work, I make a peanut butter chocolate protein smoothie!
1 scoop chocolate protein powder
1 tablespoon of cocoa
1 tablespoon almond butter (you can use peanut butter)
1 cup vanilla almond milk
This one was great for a chocolate craving! Next time I would add some spinach-just because it makes me feel better knowing there’s some green in there without tasting them.
Soo, back to this deep thinking. As if Nursing school isn’t enough- I just have to add more onto my plate. I’ve been seriously considering becoming NASM certified. I’ve done some research and feel pretty confident in my ability to pass the test. It would be a huge accomplishment for me to say that I was certified and the possibilities with a certificate are unbelievable!
For those of you who are NASM certified, do you love it? What have you done with the certificate? How has it impacted your life? Do you recommend that program? Have you gotten a job with it?
I guess it’s a chocolate kinda day for me. After an excellent day of running errands and grocery shopping, I stopped to make a protein shake to take on the way to work with me. I will call it chocolatechocolateproteinshake.

It didn’t look the greatest but it sure tasted good!

What a morning! With Chicago expecting 4-9 inches of snow, the plows are out, schools are closed and the snow is falling fast. My sisters’ school called a Snow Day, so they got to stay home. I was excited because this meant Anna and I could go to the gym together. I love working out with a buddy, but it is hard to find one that keeps up with me or pushes me- my sister does both! As a soon to be college cross-country runner, she is super fit! And she loves to work out so I always enjoy going to the gym with her. We swap new workouts and catch up while on the cardio machines. This morning we hit the gym at 8:30 and right away hopped on the elliptical. We spent 40 (quick!) minutes chatting. This is why I love a workout buddy- it makes the time fly. After 30 minutes, Anna jumped over the stair master for the last 10 minutes. Then we headed upstairs to do an intense ab workout and some leg machines.
We then hit Starbucks for a nice treat after. I got a soy latte and Anna chose a skinny caramel macchiato.
Now for breakfast! With the snow falling and my soy latte in hand, I wanted something warm and yummy this morning. So I looked up a recipe for Paleo Pumpkin Pancakes (PPP) and I have found a new love! These pancakes are sumptuous. They are so full of flavor, I didn’t even need syrup or honey to sweeten them.
1/4 cup of gluten-free flour
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon of salt
1/8 teaspoon of nutmeg
1/4 cup pumpkin
1/8 cup honey
1/2 teaspoon vanilla extract
1 tablespoon of almond milk
I got the recipe from another website but modified it for my liking. Now if you are not the biggest fan of pumpkin, I encourage you to try them even still. My sister Catherine made a plain batch of Paleo Pancakes (she does not like pumpkin) but ended up eating half of my batch!
I topped them off with half a banana. These hit the spot!
After gobbling those pancakes up, I spent the afternoon messing around with our internet (the reason for the late post). After hours spent on the phone with Comcast, I was starving. Lunch time!
